Chickpea patties burger

Prep time - Overnight ( If using dry chickpeas ) + 30 mins for boiling chickpeas + 15 mins for   making the patties masala
Cooking time - 15 mins
Complexity - Medium
Servings - For 3

Ingredients :-
  • Dry or canned chickpeas - 1 cup
  • Carrot - 1/2 cup, grated
  • Extra firm tofu or Paneer - 1/4 cup, grated
  • Buns - 6 ( I have used whole grain baguette, you can use any kind of bread for this )
  • Bread crumbs - 1/2 cup
  • Green chili (optional )- 2, thinly cut
  • Cucumber - 6 round slices
  • Tomato - 6 round slices
  • Guacamole - 6 tbsp., you can find recipe here ( http://tryyourowntaste.blogspot.com/2013/07/guacamole.html  ) 
  • Salt - 1 tsp, for patties
  • Salt - 1 tsp, for boiling chickpeas
  • Olive oil - 2tsp
Method :-

If not using canned chickpeas :

Soak chickpeas in water overnight ( if not using canned). Add 3 cups water, salt and chickpeas in pressure cooker. Pressure cooker  till 4-5 whistles on medium heat (If chickpeas aren't done, put them back on cooker and cook for 1 or 2 more whistles). Once it's done, take them out and drain all the extra water. Let them cool down for an hour, you can put chickpeas in fridge to make this process faster. Once cooled down try to make the coarse paste of chickpeas using your hands or a spoon. It should not be smooth like a paste.

In a bowl, add grated carrot, tofu and coarse chickpeas. Put salt and green chilies. Mix everything together and try to divide this mixture equally in 6 portions. Take one portion and roll it like a ball, pat a little so that it becomes a bit flat. Dust this flatten pattie with breadcrumbs. Repeat this process for all the remaining portions.

 Heat a flat nonstick pan on medium heat. Put  1 tsp of olive oil/ vegetable oil on the pan once it is heated. Put bread crumb dusted patties on pan; depending on how big your pan is, you can add as many patties as you like in one go. After 2-3 mins, turn the patties so that they can get cooked from both the sides. You need patties to be turned golden red from both the sides. This process might take 7-10 mins. Once all the patties are done, put them aside.
 Slice the bun from the middle. Heat a nonstick pan again and put 1 tsp of oil. Once heated, put buns or bread slices on the pan and toast them a little, not more than 1-2 mins. Once toasted, put a spoonful of guacamole on one side of the bun or bread, add a slice of cucumber over it. Put one pattie on top of cucumber. Now add a slice of tomato and finish this layering process by putting the other slice of bun or bread. Repeat the same process for making all the burgers. Your chickpea patties burger is ready. Enjoy.

* For making patties, you need chickpeas to be hard boiled otherwise the mixture for making patties will become too watery.
