Lauki ka raita

Prep time - 30 mins
Cooking time - 5 mins
Complexity - Easy
Servings - For 4

Ingredients :-
  • Lauki ( bottle guard ) - 1 cup grated
  • Thick curd - 1 1/2  cup
  • Green chilli - 2, thinly cut
  • Black salt - 1 tbsp
  • Salt - 1 tsp
Method :-

Boil grated lauki in 2 cups of water at medium heat in a pan. Let it boil for 20 mins. Once boiled, switch off the gas. Pour a glass of cold water over boiled lauki. Use a strainer and drain all the water out. Meanwhile take big bowl and put curd into it. Beat curd so it becomes smooth. Add boiled lauki, green chilli, salt, black salt and mix properly. Lauki raita is ready. Enjoy it with rice, pulav or hot chapatis.

Guacamole

Prep time - 10 min
Complexity - Easy
Servings - 4

Ingredients :-
  • Avocados - 2
  • Tomatoes - 1 medium (cut in small size)
  • Red onion - 1 medium (cut in small size)
  • Lemon juice - 1 teaspoon
  • Salt - 1 teaspoon
Method :-

Take the pulp out of avocados.
            
Mix it properly using spoon or mixer until there are no lumps and its smooth like a paste.    
  


Add finely cut tomatoes and onions. Add salt and lemon juice. Mix it well.  Put it in a air tight container inside fridge. Serve it with corn chips or use it in wraps or burgers.

It tastes better when its chill. Try to consume it within two days.

Tips
  • Try to buy ripe avocados; they will be of dark green color and it would be easy to take pulp out by just squeezing them with hands.
  • If you do not get ripe avocados then just buy the light green ones and put them at room temperature. Within a day or two, you'll have your ripe avocados.
