One can make appam from suji or oats ( for healthy version ) or a mix of both. Here I am giving recipe of suji (semolina) appam. You can substitue oats for oats appam.
Ingredients:-
- Suji (semolina) - 1/2 cup
- Curd enough so that after mixing it with suji we get paste just like idli batter
- Green bell pepper - 1/3 cup ( finely chopped )
- Onions - 1/3 cup ( finely chopped )
- Tomatoes - 1/3 cup ( finely chopped )
- Green chillies - 2 or 3 finely chopped (optional)
- Salt - according to taste
- Vegetable or olive oil
- Mustard seeds
- Appam mould (I had to get it from India, but you might find in Indian shops). It looks like this:
Method :-
Mix suji with curd and let it stay in a cool place for 2 hrs. You can place it inside fridge. Take it out from fridge and mix water if the paste has become very thick. It should be thick like the paste you make for idly or pancakes.
Mix onions, bell pepper, chillies (optional) and tomatoes with the suji paste and add salt. Put appam mould on the gas (medium heat) or cooktop and pour 2-3 drops of oil in each appam mould's section. Once the oil is hot, put mustard seeds ( not more than 7-8 ) in each section. As soon as the seeds starts spluttering, you can put suji paste in each section one by one. It will look like this:
After 3-4 minutes, check by turning one appam with the help of a spoon. If its cooked, it will look golden red in color. If red in color, turn all the appams so that they can get cooked from the other side.
Once they are cooked, take them out from the appam mould. Appam tastes best when served hot. Enjoy appam with your favorite chutney, tomato sauce or hot sauce.
